Posting this here for reference so I don't have to go digging through old email to Tzeenj next time I want to make this and want to remind myself what I did.
Ingredients:
- pizza crust produced by your preferred mechanism
- butter
- a little flour
- some milk
- multi-cheese shredded blend (this go around was fontina, parmesan, asiago)
- freshly ground pepper
- a splash or two of lemon juice
- a yellow onion, reasonably finely chopped
- walnuts, chopped
- feta cheese, crumbled
- fresh mozzarella, cut into flat chunks
Sauce procedure:
Make a roux with the butter and flour. Add milk, lemon juice, and the shredded cheese blend to produce cheese sauce with a tang. Grind in fresh pepper to taste.
Flatten crust onto your pan.
Apply cheese sauce to crust to hold it down.
Spread the chopped onion evenly over the cheese sauce.
Spread the walnuts evenly over the chopped onion.
Crumble the feta over the walnuts.
Garnish with fresh mozzarella pieces.
Cook as pizza.
