Ingredients:
- A pound or so of chicken breast meat, chopped
- An onion, chopped
- Some garlic (how much I don't know,
teinedreugan handled that bit), chopped
- About a spoonful of shredded ginger
- A handful of dried apricots, chopped (such is the theme)
- Some heavy cream
- Butter
- About eight whole cloves
- A bay leaf
- Ground cardamom
- Ground pepper (I used white, but I usually do)
- A little white wine
and
- Rice
- Water
- Saffron
- Jasmine essence
Procedure:
Put appropriate quantities of water and rice in a pot, add a trickle of jasmine essence and saffron. Prepare as one prepares rice.
Melt butter in frying pan. Add chicken, onions, ginger, garlic, bay leaf, cloves, splash of white wine, cardamom and pepper to taste, in some sort of order that may depend on whether one has them chopped to start with. Cook until chicken is lightly browned and onions are going translucent. Pour in the cream. Toss in the apricot bits. Cover. Wander around for a bit until it seems plausible that it's done.
Then eat it.
