Fortunately, brewing, while it can take six months to multiple years, doesn't actually require one to do anything for most of that time. And a one-gallon batch doesn't take much space -- just the two jugs. (One to brew in, one to siphon the brew into occasionally so it clears and doesn't get muddled up with dead yeasts.) Five-gallon jugs take a lot more space. :}
