My bafflement is induced a great deal by the fact that Vitamin C is another name for ascorbic acid. The concept of a non-acidic acid makes my poor, tired brain hurt.

Yep: the non-acidic Vitamin C is a salt of the acid, such as sodium ascorbate.

I could quote you more while I still have the book entitled "Vitamin C: its Chemistry and Biochemistry", if you want to know :)

. . . yah, dictionary.com identifies it as the primary acid in vinegar. Neither of the two vinegar bottles I snagged specified, and I didn't go digging for the others.
