I've said that I can navigate through AMS in my sleep, "and that's good because that's usually how I encounter it." I'm willing to take the entering Schengen connection times a bit close (near-minimum legal connection times rather than sensible connection times) because (a) I have a magical EU+ passport[1] so clearing through the egates is quick and (b) at worst I'll get on the next MUC flight instead.
Sadly, my 2019 trip to Dublin (which didn't require entering Schengen) was the one where my bag got delayed in AMS and took a while to get to DUB and thence to my hotel.
[1] IE, which still has easy access to the UK along with the remaining EU and EEA countries.
